Easy Omelette in a Cast Iron Skillet A fast and easy three-egg omelette, made in a Lodge cast iron skillet. This is a modern-day cast iron skillet made by Lodge for Cracker Barrel. Some people say the so-called "rough" surface can't be non-stick, but a seasoned cast iron skillet is as non-stick as any good pan. You don't have to grind down the surface of a cast iron pan to give it a good non-stick surface. All you need is patience. :) Cook your eggs at a low temperature, no more than 8:00 on the stovetop burner dial (low-to-medium heat), and you'll have a delicious cheese omelette in about five minutes.
